Cauliflower Rice-ball Casserole (Serves 8)

INGREDIENTS

5 cups frozen cauliflower rice

5 links of lean Italian turkey sausage

1 cup chopped white onion

1 clove garlic minced

1 cup frozen peas 

3.5 cups marinara sauce

1/3 cup of shredded Parmesan cheese

2 cups of shredded mozzarella

1/2  cup whole wheat seasoned breadcrumbs 

1 egg

1 TBS EVOO 

cooking spray


** To make GF, substitute whole wheat breadcrumbs for GF option

INSTRUCTIONS

1. Cook cauliflower rice as per instructions

2. Place cooked rice in large bowl and cool

3. In large frying pan, heat up EVOO and saute onion and garlic for two minutes 

4. Remove turkey sausage meat from casing and add to the pan, chopping up meat as you cook

5. Drain excess liquid from pan 

6. Add frozen peas and stir in to mix

7. Add 1.5 cups to meat and pea mixture and simmer on low for 5 minutes. 

8. Spray 13X( in. baking dish with cooking spray, making sure to also spray the sides.

9. Add bread crumbs and roll the pan to coat the bottom and sides of pan

10. Crack egg and Parmesan cheese into rice. Mix well

11. Place half of rice mixture in the pan and press down to make flat

12. Evenly spoon entire meat mixture onto rice

13. Use the remaining rice to cover meat layer, using spoon to flatten

14. Top the casserole with the remaining sauce and evenly sprinkle shredded mozzarella, covering entire dish

14. Cover with tinfoil and bake for 20 minutes

15. Let stand for 3-5 minutes before cutting into 8 sections
